Aging

For the aging of our wines we use barrels of 225L made from French Allier oak. These are joined by a very small percentatge of American oak that have been made with the best wood selected and dried outdoors for 30 months.

It’s anywhere from 6 to 18 months that the wines will age in the barrels until the moment of bottling, all the while they are neither filtered nor stabilized. We’ll use new barrels until they’re about five years old and during the aging a natural stabilization process occurs within the barrels so it’s not necessary to add any chemicals.

Once bottled, additional aging in the bottle will take place until the wine is found to be in the most optimal moment to consume. All our wines are suitable for vegan people.
